The other night Anthony and I were lucky to host Laki, a friend of Anthony’s from Australia! We decided to celebrate with an all-out seasonal feast.First up, of course, was a salad.I kept it pretty simple: lettuce, avocado, pepper, croutons, and sunflower seeds. Lemon-honey-olive oil dressing.
The main game was this Cooking Light butternut squash lasagna which I made just over a year ago, too!Key ingredient: cheese.Served.The party didn’t stop there. How about a slice of pie?I have never made cheesecake in my life (aka I haven’t lived), so I decided the time was right. Pumpkin caramel cheesecake it was!
Have you ever made your own caramel? It’s actually not too difficult. The moment you decide to take the mixture off the heat — for true caramel instead of a burnt gooey gloop — is a delicate one. Be careful! All together, with a few extra pecans to boot:I love all flavors fall.
