seasonal feast for a special guest

The other night Anthony and I were lucky to host Laki, a friend of Anthony’s from Australia! 11-_DSC0037We decided to celebrate with an all-out seasonal feast.butternut_squash_lasagna_0022First up, of course, was a salad.04-_DSC0017I kept it pretty simple: lettuce, avocado, pepper, croutons, and sunflower seeds. Lemon-honey-olive oil dressing.

The main game was this Cooking Light butternut squash lasagna which I made just over a year ago, too!butternut_squash_lasagna_0019Key ingredient: cheese.butternut_squash_lasagna_0012Served.butternut_squash_lasagna_0026The party didn’t stop there. How about a slice of pie?pumpkin_cheesecake_1I have never made cheesecake in my life (aka I haven’t lived), so I decided the time was right. Pumpkin caramel cheesecake it was!

Have you ever made your own caramel? It’s actually not too difficult.homemade_caramel_sauce_0005The moment you decide to take the mixture off the heat — for true caramel instead of a burnt gooey gloop — is a delicate one. Be careful!homemade_caramel_sauce_0009All together, with a few extra pecans to boot:pumpkin_cheesecake0034I love all flavors fall.
