Good morning! I hope you had a warm and relaxing weekend. Before the temps dropped to single digits here in Tennessee, I made sure to get in one last run…A little over 10 miles in some extreme winds and grey skies. It was in the 40s when I headed out — and by the end of the day, it was below 20 outside. Crazy!I am generally pretty happy to be out and running (yep, even when I’m out for my sixth run of the week), but to be honest with you, internet friends… yesterday I was just bleh. I’ve been battling a cold for the past few days and the weather was really uninspiring. Each mile was a windy, sniffly struggle. BUT I made it through! It’s the bad runs that make the good runs count, right :)?
Nothing like mom’s home cooking to bring my spirits back up!Speaking of being home: For anyone wondering if I’m ever coming back to DC — yes, eventually. Since Anthony has a lot of vacation time and I can work from home, we decided to take a long, long Christmas break! We are sticking around to celebrate his birthday today and I’m going to my cousin’s wedding over the weekend — and THEN you’ll see pictures of the White House, street furniture, Tahiti PA, etc. again.
Anyways, back to the food. My mom whipped up herb-crusted pork tenderloin with raspberry chipotle sauce (recipe here and here). Grits and adorable mini squashes on the side.Pork + tangy fruit is a delicious and strange combination. I don’t really cook pork that much (other than bacon, of course…) but am definitely going to add it to the menu for the future.
I was in charge of the salad!Mixed leaves, tomato, and avocado. The kicker: caramelized red onion and a simple, sweet balsamic dressing.
