numb run + warm salad

Hi there! Happy Friday! Excuse all the typos in this post — my fingers are still numb from this morning’s 10-degree jog.DSC04277 Anne and I have officially become badass (or crazy?) runners for tackling the beautiful yet bitter-cold trails today. Even though it was slippery and freezing, we still had fun!DSC04278The sun kept us slightly warmer and we chatted away for the first five miles. By the last mile, though, my mouth was actually sort of frozen and it was hard to speak clearly. Haha.

There was also lots of stopping to walk/skate on icy patches and take silly photos. Don’t laugh at my fur hat… it is the warmest thing in the world.DSC04276I’m so glad I had a running buddy today! I don’t know if I would have braved the cold and snow solo — thanks Anne!

It’s been a while since I posted a weekly salad… so, here you go!roasted_vegetables_shrimp_salad_DSC0089I made this roasted veggie salad (which I consider one of my best salads ever) for lunch yesterday — topped with shrimp!roasted_vegetables_shrimp_salad_DSC0087I  heated up the veggies and dressing beforehand, so it made for a sort of warm, comforting winter meal. roasted_vegetables_shrimp_salad_DSC0086Love this salad because the roasted veggies (especially the corn!) have so much flavor. I think I had a few more things to say, but my brain is too frozen to remember them right now.   1. You guys are bad-asses! Sorry I had to bail, I now have a date with the treadmill during lunch time. Not as exciting as running with you guys! Saturday isn’t supposed to get any better. Boo. Love the hat! I would totally rock it too – especially in this weather!

  2. I love hot salads! That looks amazing! I’m doing a fish taco bowl for supper tonight with the beans, corn and rice also. Delicious! I’m looking forward to my 11 mile run, trying my energy gel recipe, and going shopping with my sisters!

  3. Nothing like having the running trail all to yourself – beautiful photos! I would definitely eat a warm salad if it was prepared right (especially when it is cold out). I have never fallen on snow/ice but have twisted my leg in the wrong direction in order to stop from falling. It probably would have been better to take the fall!

    I slipped on ice twice after it snowed last time. And that was just getting to the trail. lol. I have never fallen while running though.

    • no, i don’t have any yaktrax but think it’s a good idea, especially if you live in an area that gets a lot of snow (we typically don’t)
