Hi there! Happy Friday! Excuse all the typos in this post — my fingers are still numb from this morning’s 10-degree jog. Anne and I have officially become badass (or crazy?) runners for tackling the beautiful yet bitter-cold trails today. Even though it was slippery and freezing, we still had fun!The sun kept us slightly warmer and we chatted away for the first five miles. By the last mile, though, my mouth was actually sort of frozen and it was hard to speak clearly. Haha.
There was also lots of stopping to walk/skate on icy patches and take silly photos. Don’t laugh at my fur hat… it is the warmest thing in the world.I’m so glad I had a running buddy today! I don’t know if I would have braved the cold and snow solo — thanks Anne!
It’s been a while since I posted a weekly salad… so, here you go!I made this roasted veggie salad (which I consider one of my best salads ever) for lunch yesterday — topped with shrimp!I heated up the veggies and dressing beforehand, so it made for a sort of warm, comforting winter meal. Love this salad because the roasted veggies (especially the corn!) have so much flavor. I think I had a few more things to say, but my brain is too frozen to remember them right now.
