favorite posts from the past + we actually cooked dinner

Good morning! It’s Friday!!!!!! I usually take Fridays (and/or Sundays and Tuesdays) off of running and do cross-training instead.IMG_3133 Although sometimes this blog makes it seem like I run all the time, I don’t!

Last week I did a list of “favorites,” entertainment-style. This week I was thinking I might throw some of my favorite blog posts from the past at you… oldies, but goodies :)

1. My grocery store smackdowns, comparing prices at Whole Foods and Harris Teeter (round 1 here and round 2 here)P10005342. Random post where I tested out different mascara brands (and became a fashion/beauty blogger for one day)covergirl_lashblast_fusion_mascara_0019-0013. My list of allllllll the trips we took in 2013. It was a big year!P10007204. Recap posts of our honeymoon in Mexico (sometimes when I’m sad or bored, I just read these to re-live it…)10-_DSC00615. My list of the Training Crazies (with a random salad recipe, too!)3-_DSC0684If you’re a newer blog reader, hopefully some of these past posts will be entertaining!

Back to the present: Last night Anthony and I had to cook dinner for the first time in a long time (in case you missed it, his parents have been staying here for the past few weeks and cooking us delicious food every night).

I think we did a pretty good job.fish_and_quinoa_DSC0026Anthony was in charge of the fish (simply baked and seasoned with lemon, salt, pepper, and parsley). I handled the veggie explosion on the side.fish_and_quinoa_DSC0029We had a bunch of random vegetables in the fridge – corn, broccoli, summer squash, and okra. I chopped them all up and added them to some cooked quinoa and breadcrumbs. Tied it all together with a bit of butter, cheese, and milk.

Baked for about 30 minutes in the oven, and… “casserole” complete!fish_and_quinoa_DSC0035(I used this recipe for inspiration, but altered it quite a bit)

Yum yum yum.fish_and_quinoa_DSC0036Have a fabulous FRIDAY! I’m off to work and rest up for my long run and beer fest tomorrow.

  •  Do you or your significant other do most of the cooking in your house?
  • How many days a week do you take off from running?
  • What are you most most most looking forward to this weekend?
