carbtastic chronicles #11: holiday pumpkin bread

Hey there! How’s your weekend going? Ours has been a whirlwind.

But before I get to that, let me share a loaf of bread!braided_pumpkin_bread_DSC0002This loaf is glowing orange — because it’s full of pumpkin! When I saw King Arthur’s Holiday Pumpkin Bread, I had to give it a try. Tis the season, right?braided_pumpkin_bread_DSC0007I’m still new to braiding and twisting bread, so this loaf was a little more work than usual. At some points, my braid turned out even and perfectly twisted…braided_pumpkin_bread_DSC0016and at other points, it was more… abstract. Ha.braided_pumpkin_bread_DSC0017But luckily, every bit of it tasted really good. Moist, soft, and just slightly sweet.

I stuck to the recipe pretty closely but subbed in an extra cup of wheat for white flour and added a tablespoon of vital wheat gluten. The key ingredient, in my opinion, was the crystallized ginger. Yum!braided_pumpkin_bread_DSC0002We ate our loaf sliced, toasted, and buttered for breakfast. Occasionally, we topped it with Trader Joe’s pumpkin butter spread, too. And within two days it was gone :). The end.
