7 hills + simple dinner

The hills are alive! Right?0319150650And my hamstrings are dead. This morning I tackled this little monster seven times, coming in at 54-57 seconds per rep. Not so bad!

Highlight of my very boring route: This awesome 80s throwback couch, located on 14th and Setliff. How chic!0319150702Other than that, it’s looking like a pretty gloomy day out there. Let’s hope things clear up for run lunch club this afternoon?0319150643Guys. Last night I think we made one of the best dinners we’ve had in a long time. chicken_with_asparagus; quinoaIt was seriously simple, but so good! Here’s the lineup: Crumbed chicken. Asparagus. Quinoa. chicken_with_asparagus; quinoaWe took our meat tenderizer to town on some chicken breasts; then coated them in an egg/milk mixture. Dipped them in Italian bread crumbs and pan-friend them in a generous pour of olive oil :) After a quick fry, they were browned and ready!chicken_with_asparagus; quinoaWhile Anthony cooked up the chicken, I sauteed asparagus in olive oil and garlic. A squeeze of lemon juice and a sprinkle of Parmesan at the end. The whole meal took about 30 minutes to make! (Time to wash all the dishes, however, is another story…)chicken_with_asparagus; quinoaAfter dinner we sat down to Episode 3 of the new House of Cards… wow. Anyone else watching? Or have you all already binge-watched the whole season? :)

  1. I’m so glad to the the resurgence of couches/beds make an appearance again on your blog. When you lived in DC I just cracked up every time you posted them. When I lived there it always blew my mind to see them on the sidewalk.

    • thanks!! yeah, there’s not as much street furniture here in nashville but i do my best to capture as much as possible :). i’m hoping come spring/summer people will be cleaning up and moving out — resulting in more treasures for me to find on the sidewalks.

  2. I don’t think I’ve taken any street furniture, but I remember doing a long run once and eyeing up a smashed Little Debbie cupcake

  3. I’ve never taken any furniture, but I did once eat a cookie (unwrapped) I found on the side of the road. I had to run around campus in high school for gym class and was starving, and then suddenly this cookie appeared. I took it as a sign. 😉
