super early run, super loaded potatoes

I have a feeling today’s going to be a long one. Maybe because I woke up at 4 am? 0401150534I haven’t been able to run with my friend Lizzie in a while since our schedules have been off. So, today I made the sacrifice to get up at dark o’clock and run with her!

And also run with this lonely graffiti guy.0401150542Lizzie is a speedster so it was a good-in-an-out-of-breath–but-still-asleep kind of run. I have no idea what we talked about. In fact, I’m starting to wonder whether the whole thing was a dream. Is it bedtime yet?

The lineup: barbecue chicken (cooked in the slow cooker), avocado, tomato, and Greek yogurt. I was tempted to put some bacon on there, too… but I stood strong. :)barbecue_chicken_loaded baked_potato with saladOn the side: Romaine with olive oil, white wine vinegar, honey, lemon, salt and pepper. Per our conversation about lettuce lifespan and quality the other day, I’ve been buying heads of lettuce over bagged and boxed varieties. They seem to last longer and taste better!   1. – I usually buy heads of lettuce as well.
    – 6 am, I’m not that crazy:)
    -Regular potatoes. Sweet potatoes are not grown in my country (but you can buy them in supermarkets) and they taste so unusual to me. I thought my kid will like them, because he likes sweet food, but nope.

  2. I don’t know how you do it.. I don’t think I’ve ever run before 8 am unless it’s for a race. I just can’t get my body moving that early!

    The potatoes looks really good – I’ve never though about using avocado as a topping, I’m going to have to try that!
