Good day to you!Not that anyone remembers, but I did say yesterday that I was going to do my track workout on Thursday. But I went today instead. Change of plans!I figured I’d get my speed session in today so that I can rest up for the Country Music half marathon this weekend! Oops. All the Boston energy spilled over and made me want to race. The CM half was my first ever race (2008) and I also did it last year. Can’t wait to give it another go this weekend! Considering I decided to run it yesterday, I don’t have any real goals in mind. I’d love to beat my time from last year, though.
Since I know I need to get 3x faster by Saturday, I gave it my all at the track today.8x400m, at about 85 seconds per rep. Standing rest of 2:40 between each rep. (Roughly a 2:1 rest:work ratio). Anthony came along too!Good run.
And now it’s time for burrito bowls.I love Chipotle. My goal in life (in addition to re-creating the KIND bar) is to re-create the burrito bowl :). I think this attempt turned out pretty well!I did a base of brown rice and quinoa. Topped with carnitas (I loosely followed this recipe), sauteed onions and peppers, and black beans. On the tippy top: sliced radishes (love their crunch!), avocado, cheese, and sour cream! Wow, that’s a lot of food. Haha.Speaking of Chipotle, they’re doing something really cool in Nashville today! Head there for dinner tonight and help support a good cause
