running thoughts + cook smarts

It’s 7:30 in the morning. Who’s ready for happy hour?0512150632aThe Shelby Park greenway was full of encouragement today! Must have been a group run or race there recently — I get to reap the rewards of all the inspiration jotted down along the course :)0512150637aFive-mile fartlek. One mile easy, and then alternating easy-hard every half mile after. Over before I knew it.

Don’t you guys love this rustic bridge? Does anyone know if it’s actually still in use? I’ve yet to see a train go by on it. I wonder if you could walk on it… (These are the thoughts I have when I’m running.)0512150656aAnother question for you: Have you heard of Cook Smarts? It’s a meal planning service that seems to focus on healthy weeknight meals. I recently signed up for a 14-day trial. First meal on the menu: Shrimp vermicelli!cooks smarts shrimp vermicelli salad recipeI thought that the recipe seemed too simple to be good — but I was wrong! We both loved this dish, which was light yet filling at the same time.cooks smarts shrimp vermicelli salad recipeWe made our bowls more like salads. The Nuoc Cham sauce tied it all together with a spicy kick!cooks smarts shrimp vermicelli salad recipeLooks like the Cook Smarts recipe is available here if you want to try it — I’d recommend it! I thought this was an easy weeknight meal to pull together. I prepped many of the veggies on Sunday to save even more time.cook smarts shrimp vermicelliTime to get this day started! And then time for happy hour.

  • Anyone know the story of the Shelby Park bridge?
  • Do you use a meal planning service?
  • How often do you happy hour?

  1. So you didn’t talk about it in this post, but I thought about your blog this morning when I was running with my running group at 5:30am. I used to laugh out loud when you would say you were still asleep when you were running in the morning, but I realize now when I run at 5:30am, I’m also 100% still asleep in the first half of the run. I don’t think, or socialize, or anything, I’m just a zombie runner for like, 30 mins. Okay, enjoy your day!

  2. I love that happy hour chalk message – too funny!

I wish I could do the whole happy hour thing – but nothing around my area really does “happy hour”. I have happy hour at home, does that count 😉

    No food service for me!

  3. I’ll have to try that fartlek workout.
Yikes, I hope that rustic bridge isn’t still in use. It’s really cool looking, but I don’t think I’d want to ride a train over that 😉

  4. What a beautiful running path! I haven’t tried Cook Smarts yet, but would like to one day. I am actually childhood friends with the owners cousin :)

  5. I order from My Veggie Chef and keep a few meals in the freezer for nights when I don’t have time to cook a big meal. Everything is premeasured and chopped. They always taste great!
