I recently discovered that King Arthur Flour’s famous baking hotline has a CHAT room, too — meaning that I can easily pull up a window and pepper people with baking questions whenever I feel like it. It’s about a baking win.homemade_whole_wheat_dates_walnut_bread_DSC0270 Here’s my most recent loaf: A whole wheat/walnut/date creation that is one of our favorites so far.homemade_whole_wheat_dates_walnut_bread_DSC0273I didn’t realize this until I started drafting my post, but this loaf is pretty much identical to the last loaf I featured in carbtastic chronicles. And I’ve clearly made progress on the swirl factor.

I started putting my loaves bag in the oven at 400 for a few minutes — out of the pan, just on a tray — so that their edges crisp up really nicely.homemade_whole_wheat_dates_walnut_bread_DSC0278I also used a bit of chickpea flour in this loaf just for fun. It gives the bread a slightly denser, chewier texture. Here’s the recipe:

Whole Wheat Date Walnut Bread, with Special Guest Chickpea Flour

  • .5 cup milk
  • 1 cup water
  • 2.5 tablespoons butter
  • 3 teaspoons sugar
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups King Arthur white bread flour
  • 1 cup King Arthur whole wheat bread flour
  • .5 cup chickpea flour (or just use another .5 cup whole wheat bread flour)
  • 1 tablespoon vital wheat gluten
  • 2 teaspoons yeast
  • 6 dates, pitted and chopped
  • .75 cups walnuts, chopped

Directions: Place all ingredients other than dates and walnuts in bread machine and put on dough setting. After dough has finished, roll into a wide rectangle and sprinkle with dates and walnuts. Roll up into a log and place into bread pan. Bake for 35 minutes at 350. Remove from pan and bake for another 5 minutes at 400 for a golden crust!homemade_whole_wheat_dates_walnut_bread__DSC0266
