friday five (miles)

Friday!20160603_061500For the past couple of months I’ve been doing Friday five posts with five random thoughts but today I just have five miles to share instead. It’s a nice day here in Nashville and I wanted to kick off the weekend with a run!20160603_064218By the end of the week it’s always a struggle to wake up and get moving. But then it’s all over and you feel like a million bucks for accomplishing something before 7 a.m. (6:53 today, to be exact):20160603_065949-001Other important news to discuss: dinner! On the menu last night was panko/pecan-crusted salmon — one of my favorite “looks fancy, but is actually really easy” dishes. BTW the recipe I linked to  is just one of 100 recipes for this dish that are all basically the same: butter/honey/mustard + herbs/nuts/breadcrumbs. Coat your fish, bake at 400 for 15 minutes, and eat!panko_dijon_salmon_DSC0020-001On the side I did a shaved Brussels sprout salad with apples, pecans,feta, and a few craisins. Plus quinoa for some staying power. This was my mother-in-law’s first time eating quinoa — she loved it!panko_dijon_salmon__DSC0023Going to see the Nashville Sounds play tonight, am taking a papusa-making class tomorrow, and am off to the fabric store on Sunday. Needless to say I’m pretty pumped for this weekend. :) What are your plans?
