hot run, hot chicken, hot soup

What a way to start the week!

ugh

At 6 a.m. it was already 80 degrees with a dew point of 74 (expect pace to suffer greatly/skip run or dramatically alter goal) and suffer I did.

At least the sunrise was pretty though. I only saw about 2 other runners out there! Everyone else must have been hiding indoors with the A/C blasting. Wimps.

I knew after 0.25 miles that it was useless to look at my Garmin. My only goal for this run was to finish! Even though this pace is a lot slower than usual for me, I’m still proud of myself for getting out there in the fiery hot sun and running like a crazy person.

Speaking of fiery hot, we made HOT CHICKEN this weekend!

We had some friends over for a Southern-style dinner with all the fixins: Deviled eggs, baked beans, a farmers’ market salad, and of course the deep-fried, cayenne-basted chicken :) Plus a variety of drinks as you can see on our table. Ha!

All recipes came from my favorite Southern cook book!

Other weekend food adventures included a stop at VN Pho, a hole-in-the-wall Vietnamese spot that Anthony’s been dying to try.

Spring rolls got an A+!

The pho, on the other hand, only got a B. After eating hundreds of gallons of pho (including many in the actual homeland of this dish!), we thought VN Pho’s soup was good but not great. The noodles were too noodly, which I know makes no sense but that’s how I feel :)

Miss Saigon will continue to be our favorite Nashville Vietnamese spot, but I’m glad we gave this neighboring restaurant a try. Stay cool out there today, friends!

  1. I actually got my sleepy self up and ran before work………not a morning runner on workdays:)………and I made it 8 miles, but I suffered at a 10:00 minute pace, when I am usually around 9:00 minutes. Now I know it wasn’t just me feeling the ickiness this morning!
