cool run & lots of curry

After a soggy, hot weekend the weather finally cooled down just a tad this week! Yesterday’s run felt like heaven. It was *only* 73 degrees and the dew point was in the high 60s.


I got a late start on this run so only had time for four miles. I’m usually a “something is better than nothing” type of runner, so even if I only have time to squeeze in a short workout I figure it’s better than not running at all. Unless I’m in serious training mode — then I do everything I can to stick to the plan. What about you?


Last night I was way too excited to cook dinner because I had a hunch that this Thai green curry recipe was going to be delicious. And it was.


I’ve always bought “Taste of Thai” curry pastes and never found them very good — but it’s all you’ll usually be able to find at the grocery store. I thought ahead for this recipe, though, and bought Mae Ploy curry paste on Amazon like the blogger/recipe author suggests. Much cheaper and way tastier! It’s got a lot more spice than other curry pastes I’ve tried in the past.


The recipe is pretty quick to put together once you’ve prepped your ingredients — we added in tofu as well as chicken because I had some extra on hand. And a bit of extra curry paste and chile for more heat. Topped with cilantro and Thai basil from our garden! I think our meal looks pretty similar to the curry on the Mae Ploy label, right?


Serve with plenty of tissues, a sweat rag, and an extra glass of water. :) This one is spicy!!
