Can’t believe it’s almost Friday! We’ve had some good eats this week, including one of my favorite dishes of all time: Eggplant parmesan.
You guys know I love Cook Smarts for easy weeknight recipes, but when it comes to eggplant parm I go hardcore on the recipe — no shortcuts! Cook’s Illustrated is my go-to resource for from-scratch, tested-and-proven kitchen concoctions. Each recipe takes roughly seven hours to make so attempt these adventures at your own risk.
I spent a day making their eggplant parm recipe a few months ago and loved it. So when I saw eggplants on sale at Aldi this pas weekend my heart melted and I knew I had to make it again! (The recipe is re-published here.)
I actually don’t follow the sauce recipe — I slow cook my own the day before to save time. And since I was making a Sunday sauce, I figured I might as well whip up some meatballs too… yum. I prepped as much as I could on Sunday so that all we had to do on Monday night was bake the eggplant and assemble the layered cheesy mountain of tomato/cheese/eggplant.
Success! I filled a whopping 9×13 pan with this stuff and we’ve been powering through the leftovers all week. My eggplant parm ate about six hours of my life but it was so worth it.
Do you guys get tired of leftovers for lunch? I typically do after a day or two but NOT FOR EGGPLANT PARM.
Now that I’ve rambled on and on in a weird way about this meal, let’s go for a walk!
I’ve been on a couple of strolls this week and the weather has been wonderful. Most days on my lunch break I’m able to sneak in a stroll downtown. PS, did you hear they’re working to fix the “pedestrian scramble” on lower Broadway with benches, tables, and hopefully wider sidewalks? That would be nice. It’s madness down there.
