Ringing in Hope 5k recap

How was your weekend? Ours was a little icy:


^^ Photo from mile 2 of the Ringing in Hope 5k! I’m surprised the slick conditions didn’t convince the race managers to cancel the event. Despite a few moments when I had to tiptoe across ice, I was pretty happy with my time which was 17 seconds shy of a PR. (Official time was 20:57). My splits were 6:34, 6:45 (ice), 6:25. First time that my last mile was the fastest!


And first time I ever won first place female. I have a whole bunch of gift cards to get through!


Anthony and baby came to greet me at the finish line. PS, thanks for all of your recommendations on how to keep her hands warm! I think the “socks up to the armpits” approach is the winner :)


My two neighbors power walked the 5k, too! Go girls. Tonight we’re having a post-race dinner out!


Speaking of dinner, here’s some soup! Chicken tortilla. I was inspired by some tomatoes that were starting to go off + tortillas and a whole chicken I found buried in my freezer. I didn’t really follow a recipe, but glanced at Pioneer Woman’s post for inspiration.


Toasting our own tortilla strips (instead of using store-bought chips) was a nice change! Another “worth it” investment I make is shredding my own cheese instead of buying pre-shredded. Way more flavorful (and way cheaper). My food processor has a shred attachment that makes it super easy! Big ole food processor = great gift idea if you’re still shopping.
