treadmill runs, the run that never happened, and some dinners

Hello! I can’t believe it’s almost Friday. This week has flown by — barely any time to get outside and run. The dark + ice + cold meant I’ve had to take it to the treadmill a few times. Hopefully I’ll be back soon with some prettier photos!

I couldn’t even jog the 0.3 miles to the gym because of the ice on Monday!

Yesterday’s workout was supposed to happen, but then I found myself still in my clean running clothes at 7 pm. I’d put them on at 7 am with the intention of going to the gym… and then the day just slipped away. I considered heading out for a few miles when Anthony got home from work around 7 pm but that is basically my bedtime and having a drink sounded better. Scrubbing a high chair counts as a workout, right?

What’s on your menu this week? We are still digging the Cook Smarts meal plans. A lot of new members joined in the new year, and it’s been fun seeing everyone’s photos and reviews of the same meal on the group Facebook page!

This honey-harissa pork chop was good, but I think the carrot slaw/salad was my favorite. I used my food processor’s “crinkle cut” blade to breeze through a whole bag of carrots in minutes! (How did I ever live without a food processor?) Mint and feta on top:

The same mint was used a few nights ago for these Turkish-style pitas! Hummus, eggplant, meatballs, and lots of other yummy stuff piled up. Loved this dinner because it came together in about 15 minutes.

It’s supposed to be 65 degrees tomorrow! :) :) :)
